Low-Fat Egg White Frittatas

Looking for a lowfat, healthy grab-and-go breakfast for those busy mornings when it's usually either a toss-up between starvation and a donut? My mini egg white frittatas I made for this week's meal prep are delish AND so cute! They're super simple, yummy and even better drizzled in sriracha! This recipe makes 32 mini frittatas.
Macros (for a single frittata): Calories: 21, Fat: 0.6, Protein: 3g, Carbs: 0.4g





Ingredients: 

-3c egg whites
-2c chopped baby spinach 
-1/2c chopped red onion
-1 1/2c chopped mushrooms
-1/2c Mexican blend cheese (110kcal per 1/4c)
-2tbs red pepper flakes
-1tbs ground black pepper
-2tbs all purpose salt free seasoning

Directions: 

-Preheat oven to 400 degrees
-Spray mini muffin tin with non-stick cooking spray 
-Mix all ingredients together 
-Evenly pour into tin (may have to make 2 batches)
-Bake for approximately 8-10 minutes 
-Let cool before removing from pan

(I have been having 2 of these and one whole hard boiled egg with my oatmeal for breakfast this week!)

10 Days Out

My CT States powerlifting meet is in 10 days. I'm not sure how I'm feeling at this point about my level of preparedness. As I write this, I'm flying back from an amazing week back home in Missouri and am realizing my real world is about to start back up tomorrow. I did go to the gym 4 out of the 7 days I was home, but my workouts were subpar in comparison to how I usually structure them 2 weeks out from a competition. I have no regrets, but my diet wasn't healthy and fueling like it normally is, and the social drinking with my friends and family every night didn't aid in my performance in the gym either. Also, where else but in the Midwest would it be acceptable for the gym to be closed on Sunday?! That was supposed to be deadlift day... 

Typically, the week prior to a meet or show is a rest week and only includes light accessory work or last-minute touch-ups, but because this week set me back a bit I'm planning to lift into the first half of my rest week. Let's hope all goes well! It's also a crazy week back to work since I've been gone for so long and have a lot to catch up on. 

I'm looking forward to jumping back into my routine and into the familiarity of my usual lifting surroundings. The diet has been what has killed me I'm sure, so as soon as I land I plan to hit the grocery store and do a full meal prep for the week! I'm also struggling to lose the last couple of pounds (I'm sure this week full of beer and biscuits 'n gravy didn't help...hehe) to make my 114 weight class, but with the help of a sauna and some diuretics in the few days leading up to the meet I'm sure I'll make it. I'll do anything to make sure my bestie Maggie, who is coming all the way from Missouri,  sees me crush some serious weight next weekend!! Wish me luck!

2016 Spartan Sprint

I had been looking forward to/dreading this for awhile, but today I managed to get through 5.6 miles of ropes, mud, barbed wire and poison ivy all for that refreshing cold beer at the end! And the badass medal of course. My team was so determined and supportive and despite all our injuries that would have given anyone else an excuse to bail out, my friends pushed through and made it to the end! There may be a lot of icing and resting in their near future, but today we overcame our reservations and dominated that Spartan course!

It was incredible to see everyone with a common goal come together to help each other out. People were holding the ropes and ladders down for me when I was trying to complete an obstacle and then I would do the same for some other complete stranger once I got through. After my powerlifting meet in a few weeks, I may just have to rally the team back together to begin training for another!
